Called Kos in Sinhala, this features mature jackfruit with a dense, meaty texture that stands beautifully on its own. No heavy spices, no coconut milk. Just a quick toss with oil, a pop of mustard seeds for gentle warmth, fresh curry leaves for aroma, and sliced green chilli for a mild kick. A pinch of salt is all it needs.
The result is tender, savoury, and surprisingly light—like the vegetable equivalent of pulled meat, but fresher.
